John’s Birthday – 2014

Just a fun way to remember what I did for birthdays! (and actually have a post that has a picture!)

This year John said I could treat him like a real person so I decided to do a fun cake. I did all the things John likes…cookie dough ice cream, robin eggs, rice crispy treats (in form of oreo marshmallow crispy flavor), vanilla cake, vanilla frosting (ALWAYS everything vanilla). However, Beps and I did choose pink colored frosting because we thought it would be “Spring-ish” and John does like Spring.


Sam Hawk…

1 Cup Butter, soft (I used salted)
2 – 2 1/2 C sugar, white
6 eggs
3 Cups Flour
1/4 tsp baking soda
1 tsp vanilla
1 C buttermilk

Mix butter and sugar. Add eggs one at a time. Add flour and soda…mix till combined. Slowly add milk and vanilla. Put into greased, lined pans (I used 9 inch round). Bake at 325 for about 40-50 minutes. Watch this one because the high sugar makes it so the edges burn quick. Mine was probably about 3 minutes over-cooked but what can I say…I was drawing trains for a 2 and 4 year old 🙂

1 1/2 C butter (3 sticks), soft
2 lbs powdered sugar (or slightly less)
milk for desired consistency
1 vanilla bean (or extract but adjust everything else for extract)

Beat butter and vanilla bean seeds (scrape the inside of the vanilla bean). To get everything out of that bean, after scraping I put the whole bean into the milk I am planning to add to the frosting. Then I scrape it a little more to get every last seed and let it sit for awhile to flavor the milk. Mix in sugar and add milk to desired consistency.

I used frosting sprinkled with smashed Oreo marshmallow crispy flavor

Mini Robin Eggs…I was very tempted to do the real pearl beads you see on “nice” cakes but I figured this was way more John-ish…sometimes you just gotta give the people what they want (that is why half the time we have apple pie and cookies for birthdays). I’ll save the frills for Beps.

Mishaps…(remember I am cooking with a 2 and 4 year old 🙂 Not quite but almost very done cake, spilled milk (no crying though) and the entire bag of robin eggs dumped 🙂 And finally because everything was new to me and I was adjusting it took lots of little tastes so by the end of the morning all my stomach could handle was  broccoli. John (0f course) was late to dinner but it worked out. After we had eaten all the cake, Beps got a stool and climbed up on the counter. In trying to climb up she accidentally knocked the cake plate off and it shattered. I wasn’t too worried though because I hate that plate and I am happy if I have to get another one.
